Cream of broccoli soup


"Cream of broccoli soup is a worldwide famous soup. This soup can be prepared and shimmer using single pot. Though ingredients variations exist for this soup recipe, but broccoli, stock and milk or cream are core ingredients. It’s a very rich, creamy but also healthy recipe served hot with broccoli florets or crouton. Cream of broccoli soup goes well a toasted buttered bread baguette."

Ingredients:

1.
Broccoli head
1 medium size/200-250 gm
2.
Onion, chopped
1 small size/¼ cup
3.
Garlic cloves, chopped
2-3 pc
4.
Celery stalk, chopped
1 stalk (optional)
5.
Mixed herbs / dry oregano                 
½ Tsp
6.
Nutmeg powder 
1 Pinch
7.
Vegetable Stock/water
1.5 Tbsp.
8.
Whole milk 
1.5 cup
9.
All-purpose flour
1 to 1.5 Tbsp.
10.
Butter
2 Tbsp.
11.
Fresh Grounded Black pepper
To taste
12.
Salt
To taste
13.
Fresh cream
To garnish

  1. Chop onion, garlic and celery into small pieces and keep aside.
  2. Chop or break broccoli into florets and blanch them. keep few florets aside for garnish.
  3. Heat butter in a sauce pan or pot.
  4. Add chopped onion, celery and garlic, saute for few minutes until tender.
  5. Add the all-purpose flour, stir continuously and saute the flour for 2 minutes. 
  6. Add the drained broccoli florets and mix well.
  7. Add water or vegetable stock, stir well and cover the pot or pan with its lid.
  8. Meantime heat milk…no need to boil.
  9. When the mixture is still slightly hot or warm, using an immersion hand blender, blend the soup till smooth in the same pot. You can also blend in mixer-grinder or regular electric blender.
  10. Switch on the flame and pour hot milk to the pureed soup in same pot and stir well.
  11. Simmer the soup on low flame for few minutes, no need to boil more.
  12. Add the oregano and mix well.
  13. Lastly add salt, freshly crushed black pepper and nutmeg powder and mix well.
  14. Healthy and yummy the cream of broccoli soup is ready to serve. Pour the soup into soup bowl, garnish with broccoli florets and serve hot with toasted buttered bread or baguette.
Quick tips:
1.     To blanch broccoli florets heat enough water with ¼ tsp of salt in a pot until vigorously boiled. Switch off the flame and soak the broccoli florets into the pot for about 20-30 seconds and then drain the florets. Blanch method help to get rid of the insects inside the florets. You can keep few florets without blanch for garnish.
