Tomato celery soup

Ingredients:


1.
Tomato, sliced in 4
4 large
2.
Celery sticks, sliced
3 stalk
3.
Onion, sliced
1 medium
4.
Garlic, crushed
4-5 cloves

Vegetable Stock/Broth or water (See Recipe Notes)
2 cups

Olive oil/Butter
1 Tbsp.
7
Salt
To taste
8.
Freshly ground black Pepper
To taste
9.
Cream
½ - ¾  cup

  1. Heat olive oil in a pan; add onion, celery and minced garlic, sauté for 5 minutes over medium heat till onion are soft.
  2. Add sliced tomatoes, sauté for another 5-8 minutes till tomatoes starts turning gooey.
  3. Add water or vegetable stock to the pan, and bring to the boil. Lower heat, simmer gently, partially covered for around 15-20 minutes. You can pressure cook it for one whistles. Set aside to cool down.
  4. Using a hand mixer or a food processer blend the mixture to puree.
  5. Strain the pureed mixture in the pan, stir in cream, salt and pepper, and simmer over low heat for 2 minutes. 
  6. Garnish with cream and serve hot garlic toast or any bread or baguette.
