Vegetable clear soup

Ingredients:

1.
Carrot-thinly sliced
1 small
2.
Chinese cabbage or Cabbage or Bok choy, chopped
2-4 leaves/ ½ cup
3.
Onion, chopped
1 small
4.
Spring onion /Scallions, sliced
½ cup
5.
Button  Mushroom sliced
6-8 pc
6.
Red Bell pepper, seeded, and chopped in 1 inch pc
1 medium
7.
Broccoli florets
8-10
8.
Garlic Crushed
3-4 cloves
9.
Celery -diagonally sliced
½ stalk
10.
Green beans, chopped in 1 inch pc
8-10 pc
11.
Snow peas –halved
8-10 pc

Vegetable Stock/Broth (See Recipe Notes)
4-5 cups
13.
Black pepper powder
¼ Tsp
14.
Oil
1 Tbsp.
15.
Salt
To taste

  1. Chop and sliced all veggies.
  2. Heat the oil in a deep non-stick pan; add chopped onion, spring onion white, celery, crushed garlic, and sauté for 1 minute. 
  3. Add  sliced carrot, red bell pepper, green beans, and cook for 1 minutes.
  4. Add mushrooms, Bokchoy, spring onion,  snow peas, broccoli florets, red cabbage and mix well.
  5. Add vegetable stock and bring to a boil.
  6. Add salt, black pepper powder and serve piping hot

Quick Tips:
  1. Feel free to use any combination of your favorite veggie as per availability. Cabbage, cauliflower, potato, leek, spinach, spinach, tofu can be other options.
