Vegetable hot & sour soup



























"Vegetable hot and sour soup is a fusion recipe from Indo Chinese cuisine. This soup is very comforting and warming in the chilled winters. Just a slice of extra ginger perks you up instantly from nasty cold. This soup allow you to experiment with many ingredients such as bamboo shoots, tofu slices, lily buds, wood ears, button mushroom and other available fresh vegetables. I have used what was available to me but in all case this soup should be spicy and sour. Let’s enjoy the heady flavors of Vegetable Hot & Sour Soup"

Ingredients:

French beans, chopped

Carrot, grated

Bamboo shoots, chopped
1 medium (Optional)

Button mushroom, chopped

Green bell pepper/capsicum, chopped

Spring onion greens, finely chopped
1 big stalk

Onion, chopped

Ginger, grated
1” piece
10.
Celery , chopped
2” stalk (Optional)

Garlic, chopped
3-4 cloves
12.
Oil
2 Tbsp.

Vegetable stock/water
4-5 cups
14.
Salt
To taste

Sugar/ honey
½ Tsp.
16.
White pepper powder
½ Tsp.
17.
Corn flour
3 Tbsp.
18.
Rice vinegar/white Vinegar
2 Tbsp. OR add as required
19.
Dark soy sauce
2 Tbsp. OR add as required
20.
Green chili sauce
2 Tbsp. OR add as required
21.
Chili oil
1 Tbsp. (Optional)

  1. Chop onion, bamboo shoots, button mushrooms, French beans, capsicum, celery, garlic and spring onion greens.
  2. Shred cabbage and grate carrot and ginger.
  3. Make a paste of corn flour mixed with ¼ cup of water and keep aside.
  4. Heat oil in a deep pan. Add chopped onion, garlic, celery and ginger. Stir and sauté for 1 minute.
  5. Add bamboo shoot, French beans and mushroom and stir fry till the mushroom get light brown from edges.
  6. Add carrots, cabbage, capsicum on medium high flame and sauté for 1-2 minutes.
  7. Add vegetable stock, soy sauce, green chili sauce and mix well.
  8. Add sugar/honey and stir.
  9. Add corn flour paste and stir it very well till the soup thickens slightly.
  10. Add salt ,white pepper powder and,vinegar; give a final stir.
  11. Garnish with spring onion greens scattered on top and a dash of chili oil and serve hot.
Quick Tips:
  1. You can use black pepper powder if white pepper powder is not available with you.
  2. Chili sauce and white pepper powder for spiciness, vinegar for sourness are the common key ingredients. 
  3. As this is vegetarian version so feel free to use available fresh vegetables with other available key ingredients.
  4. In all cases, this soup contains ingredients which make it both spicy and sour.
