Creamy Pesto Pasta




"Here comes the recipe of creamy pesto pasta full of exotic flavor and rich texture. This recipe is a unique blend of rich pesto sauce, creamy white sauce and wholesome sautéed vegetables with dash olive oil. A perfect vegetarian dish you will fall in love with."

Ingredients

1.
Rotini pasta, (Any shaped  pasta will work )
400 gm

Onion, chopped
1 large
3.
Red bell pepper, chopped
1 medium
4.
Green bell pepper, chopped
1 medium
5.
Zucchini, chopped
1 medium
6.
Broccoli florets, blanched & chopped
1 cup
7.
Corn, boiled
½ cup
8.
Olive oil
2 Tbsp.
9.
Pesto sauce ,packaged (See Recipe Notes for Recipe)
1 ½ cup
10.
White sauce/ heavy cream,(See Recipe Notes for Recipe)
1 cup

Grounded black pepper
To taste

Salt
To taste

Parmesan cheese (optional)
To garnish

  1. Cook pasta in a large pot of salted boiling water until al dente or as per packet instructions. Drain and keep aside.
  2. Chopped all the veggies and blanch broccoli and corn.
  3. Heat oil in pan, add chopped onions and sauté for 1 minute.
  4. Add bell peppers, zucchini, and sauté for a while.
  5. Add broccoli and corn and mix well.
  6. Add white sauce, pesto sauce, black pepper and salt and mix well, adjust the sauces as per your taste.
  7. Add boiled pasta and mix well.
  8. Garnish with parmesan cheese and serve hot.
Quick Tips
  1. Use vegetable of your choice, there isn’t any limit.
  2. You can use any shaped Pasta like Farfalle, fettuccini or even elbow.
