Healthy Minestrone Soup























"Minestrone soup is the ideal way to start a hearty meal; alternatively it's so jam-packed with the goodness of vegetables that it could even serve as a whole meal by itself! And this version of minestrone soup with moong dal stock is super healthy and full of protein."

Ingredients:
For the Moong Daal Stock:

Moong dal / Split green gram
4 Tbsp.

For the soup:
1.
Onion, chopped
1 small

Carrots, chopped
1 large

Cabbage ,shredded
½ cup

Celery , chopped
¼ cup

Green beans, chopped
6-8 pc

Baby spinach, chopped
1 cup
7.
Garlic, chopped
4-5 cloves
8.
Elbow macaroni pasta
¼ cup
9.
Kidney beans, soaked and cooked (or any bean)
½ cup

Olive oil/butter
2 Tbsp.

Salt
To taste

Freshly ground black Pepper
To taste

Mixed Italian herbs
1 Tsp.

Parmesan cheese, grated (Optional)

For the Moong Daal Stock:
  1. Wash the moong dal and add the tomatoes to it.
  2. Add 4 cups of water and pressure cook for 2 whistle.
  3. When cooked, blend to a puree and keep aside. You can strain it.
For the soup:
  1. Soak kidney bean overnight or at least 6 hours. Pressure cook till 3 whistle and drain excess water.
  2. Finely chop all the vegetable given from the ingredient table.
  3. Heat the olive oil in a saucepan, add chopped onion, celery, garlic and sauté for 1 to 2 minutes
  4. Add chopped carrot, green beans and cabbage and sauté for more1 minute.
  5. Add the moong dal stock, macaroni pasta, boiled kidney beans, chopped spinach; season with salt, pepper and Italian herbs and simmer for some time or until pasta is cooked.
  6. Adjust the seasoning.
  7. Garnish with grated parmesan cheese and serve hot.
Quick Tips:
  1. You can use any variety of beans like chickpeas, black beans, Pinto beans etc. replacing kidney beans.
