Khajur-Imli Chutney/Dates-Tamarind Sauce




"Khajur Imli Ki Chutney or the Date Tamarind Chutney is sweet, sour and tangy chutney made from dates, tamarind and jaggery as the main ingredients. This chutney recipe is an essential garnish to most Indian Chaats like Pani Puri, Bhel Puri, Samosa and many more. This chutney can be stored refrigerated for months."

Ingredients
1.
Tamarind Paste (See recipe notes)
1 cup
2.
Pitted Dates, chopped
1 ½ cups
3.
Jaggery
½ cup
4.
Roasted Cumin powder
2 Tsp.
5.
Red Chili Powder
2 Tsp.
6.
Asafetida
¼ Tsp.
7.
Rock salt
1 Tsp.
8.
Salt
To taste
9.
Water
1 ½ cup

  1. Wash dates and roughly chop them.
  2. Heat 1-1/2 cups of water in a sauce pan on medium heat, add dates jaggery and allow it cook in the water until dates are soft and tender and jiggery had dissolved nicely. 
  3. Add in all the dry spices and tamarind paste, simmer for another 5 minutes.
  4. Switch off the heat and completely cool down the mixture.
  5. In a blender puree the mixture into a coarse or fine paste as per your preferences.
  6. Use immediately or store refrigerate in an airtight glass Jar.
