- Sift the flour, salt & baking powder into a large mixing bowl. Add oil & mix with your fingertips to combine.
- Stir in warm water, adding little at a time and knead smooth dough. Wrap in plastic and let rest for at least 10 minutes. Divide dough into 8 portions.
- Roll each portion on a lightly dusted board into 7-in. circle. To get perfect rounded tortillas, trim off ragged edges & discard. Don't roll the dough out more than once or the tortillas will be hard.
- Heat a dry griddle or heavy skillet over high heat for 5 minutes. Cook the tortillas for 30 seconds on each side or until lightly browned. Wrap tortilla in damp kitchen towel to keep them warm as you cook the other tortillas.
- Serve warm. I used to make Veggie Quesadillas.
