Christmas Fruit Cake (Eggless & Alcohol-free)


"This recipe may look like time taking seeing the long ingredients list and process of making it. But trust me it’s worth putting all your effort to bake your own Christmas cake. This recipe is egg-less and alcohol free yet super moist, fluffy and flavorful. The only preparation work to be done is soaking the dry fruits & nuts. Ingredients

For Soaked Dry fruits & Nuts (Approx-1 ½ - 2 cups)
1.
Tutti frutti/Candied fruits
½ cup
2.
Raisin
¼ cup
3.
Dried cranberries
¼ cup
4.
Walnuts/ Pecans
¼ cup
5.
Cashews
¼ cup
6.
Dates
¼ cup
7.
Candied lemon/orange
2 Tbsp.
8.
Nutmeg powder
½ Tsp.
9.
Cinnamon powder
½ Tsp.
10.
Clove powder
½ Tsp.
11.
Any fruit juice like grape/apple/orange (Fresh or Tin)
1-2 cups.


(Note: Use dry fruits & nuts of your choice and availability like Fig, Apricot, Glazed cherries, Dried currants, Almonds, Candied ginger etc.)


For the Cake


Dry Ingredients (To be sieved all together)

All-purpose flour
1 ½  cups
2.
Salt
¼  Tsp.
3.
Dry ginger powder
¼ Tsp.
4.
Clove powder
¼ Tsp.
5.
Nut meg powder
1 Pinch
6.
Cinnamon powder
1 pinch

Other Ingredients

All-purpose flour to dust soaked dry fruits
2 Tbsp.
8.
Lemon zest
½ Tsp.
9.
Yogurt ,at room temperature
1 cup
10.
Dark brown sugar
1 cup
12.
Baking powder
1 ¼  Tsp.
13.
Baking soda/Soda Bicarbonate
¾ Tsp.(Divided ½ + ¼)
14.
White vinegar
1 Tsp.
15.
Oil/ Melted butter
1/3 cup
16.
Vanilla extract
1 Tsp.
17.
Molasses for dark color (Optional)
2 Tbsp.





Step By Step Instruction: [Hide Images]

Getting Dry fruits & Nuts Soaked (To be soaked 2-3 days)
  1. Chop dry fruits and nuts into small pieces.
  2. In a big bowl or jar soak the chopped dry fruits as well the tutti frutti in fruit juice. I used fresh orange juice.
  3. Add Clove powder, Nutmeg powder and Cinnamon powder, mix well.
  4. Cover and keep in cool and dry place for 2-3 days until almost double in size. Shake the jar once in a while for even soaking.
  5. Refrigerate if soaking more than 2 days. 

For the Cake

  1. Preheat oven to 180°C/350°F. Grease a loaf tin or 6”x 6’cake pan and keep aside. 
  2. Drain soaked dry fruits just before making the cake and dust with 2-3 Tbsp. of all-purpose flour. Dusting the soaked dry fruits prevent them from sinking to the bottom. Mix to coat well and keep aside.
  3. Wash and zest/grate one lemon peel to get around ½ Tsp.
  4. Sieve all the ingredients listed under dry ingredients list thrice. Mix well and keep aside.
  5. In a big bowl, add yogurt and dark brown sugar and beat until sugar is dissolved.
  6. Add baking powder, ½ Tsp. of baking soda and vinegar and mix. Leave aside for 5 minutes, you will see the mixture getting frothy.
  7. Add oil/melted butter, vanilla extract and lemon zest and mix well.
  8. Now slowly fold in the flour mixture into the yogurt batter till everything is incorporated well.
  9. Fold in soaked/coated dry fruits into the batter. Add molasses if using and mix well.
  10. Lastly just before pouring the batter into the loaf tin, dissolve ¼ tsp. baking soda in 2 Tbsp. of hot water and pour over the cake batter. Fold in with very light hands; you will see batter will become fluffy. Do not over beat at this point.
  11. Immediately pour the batter into greased loaf tin and bake for 60 minutes or till a toothpick inserted in cake comes out clean.
  12. Remove the loaf pan from oven and let the cake cool down to room temperature.
  13. Slice and serve.

Quick Tips

  1. I used fresh orange juice for this recipe. 
  2. If the cake top brown quickly while baking, then cover the top with aluminum foil or butter paper.
  3. Once cake is cool down wrap the cake in an aluminum foil or cling film. It can be easily kept at room temperature for 2-3 days.
  4. Store  the leftover  cake in air tight container at room temp for or refrigerate it if you are living in a very hot or humid place.
