Rich Creamy Tomato Basil Soup


"Tomatoes-Basil soup is very simple recipe that can be made in less than 30 minute.
The secret to the richness in this soup is to use fresh basil leaves and tomatoes. I always prefer fresh stuff over canned one. Serve hot with a slice of French bread baguette, garlic toast or any bread of your choice."

Ingredients:

Tomato quartered

Onion, chopped
1 small

Carrot, chopped
1 medium

Garlic, crushed
4-5 cloves

Fresh basil leaves
¼  cup

Butter/olive oil
2 Tbsp.

Crushed black pepper
¼ Tsp.
8.
Sugar
1 Tsp.
9.
Salt
To taste

Vegetable broth(See Recipe Notes)
2-3 cups

Heavy cream
¼  cup

Basil leaves
To garnish

  1. Heat butter/oil in a large pan. Add chopped onions, carrot and cook for 2-3 min, stirring frequently, until onion soft and pink in color.
  2. Add crushed garlic, cook for 1 minute.
  3. Stir in diced tomatoes, season with sugar, salt and peppers, stir well. 
  4. Add vegetable broth/stock or water. Bring to a boil, lower heat, simmer gently, partially covered for around 15-20 minutes. Set aside to cool down.
  5. Add basil leaves and tomatoes in a food processor or blender, process until smooth.
  6. Return pureed mixture to the pan, stir in cream, and simmer over low heat for 2 minutes.
  7. Adjust the seasoning. 
  8. Garnished with basil leaves and heavy cream.
  9. Serve hot with our favorite bread.
