- Heat butter/oil in a large pan. Add chopped onions, carrot and cook for 2-3 min, stirring frequently, until onion soft and pink in color.
- Add crushed garlic, cook for 1 minute.
- Stir in diced tomatoes, season with sugar, salt and peppers, stir well.
- Add vegetable broth/stock or water. Bring to a boil, lower heat, simmer gently, partially covered for around 15-20 minutes. Set aside to cool down.
- Add basil leaves and tomatoes in a food processor or blender, process until smooth.
- Return pureed mixture to the pan, stir in cream, and simmer over low heat for 2 minutes.
- Adjust the seasoning.
- Garnished with basil leaves and heavy cream.
- Serve hot with our favorite bread.
