Caprese sandwich is classic Italian vegetarian sandwich – made from pesto sauce, tomatoes, mozzarella cheese, fresh basil, balsamic glaze, seasoned with fresh ground pepper and salt. This sandwich is rich and full of flavors - crunchy, gooey, tangy and sweet. But at the same time this is very easy and quick recipe for your perfect breakfast or brunch. I like my caprese sandwich with sour dough bread but you can choose your choice of bread. I always add arugula for extra green which is optional, but if its handy do add arugula. Give it a try folks and I am sure it will your favorite sandwich too!!!

- Cut tomatoes and fresh mozzarella into thick slices.
- Spread pesto on all four slices of bread.
- Now will work on one sandwich and will repeat same steps for second one.
- Arrange sliced tomatoes on one slice of bread, season with ground black pepper and salt to taste.
- Next arrange a layer of fresh mozzarella and drizzle some glazed balsamic.
- Next add a layer of fresh basil and arugula leaves.
- Drizzle some more glazed balsamic.
- Lastly place the second slice of bread on top.
- Now heat panini grill or grill pan. Butter the outside of the sandwich flipping carefully. Grill until crisp and golden.
- Serve hot.
